One-Minute Chocolate Flax Muffin

Satisfy your chocolate craving with this healthy treat. These muffins are made with flax instead of refined flour so they won’t spike your blood sugar like a typical muffin would. In addition to helping stabilize blood sugar, flax has also been shown to help with weight loss, cholesterol, blood pressure, and inflammation.

They bake super quickly in the microwave and the recipe makes two muffins so you won’t have to worry about having a batch of 12 muffins tempting you while trying to reach your health goals.

Ingredients:

  • ¼ cup ground flax
  • 1 egg
  • 1 tbsp pure maple syrup
  • ¼ tsp baking soda
  • ¼ tsp cinnamon
  • Pinch of salt
  • 1 tbsp semi-sweet chocolate chips, divided
  • ½ tsp coconut oil for greasing

Instructions:

In a bowl whisk together the flax, egg, maple syrup, baking soda, cinnamon, and salt.

Lightly grease two 3-inch ramekins (or other small microwave safe bowls or mugs), and pour in the batter dividing it evenly between the two.

Sprinkle ½ tablespoon of chocolate chips into each of the ramekins and microwave on high for 1 – 1.5 minutes.

Allow to cool for a few minutes and then eat your muffin straight from the dish or gently remove. Store your second muffin in an airtight container for up to four days in the fridge.
