Sweet Potato Turkey Chili

This sweet potato turkey chili is so easy to make and super flavorful. It contains sweet potatoes, which provide plenty of beta carotene, responsible for sweet potatoes’ bright orange color. Beta carotene is an antioxidant that supports eye health, a strong immune system, and healthy skin.

Ingredients

– 900 g (2 lbs) ground turkey
– 1 660 ml jar of strained tomatoes
– 1 19 oz can of black beans, drained and rinsed
– 1 400 g bag of frozen sweet potato chunks (or 3 cups of sweet potato peeled and cut into 1-inch chunks)
– 2 cups frozen diced onion
– 1 cup frozen whole kernel corn
– 3 tbsp chili powder
– 1 tbsp coconut sugar
– 1 tsp salt
– Juice of 1 lime
– Optional toppings: cilantro, avocado, jalapenos, cheese, sour cream

Instructions

1. Add a tsp of olive oil to a large pot over medium heat. Add the ground turkey and sauté until browned.
2. Add the strained tomatoes, beans, sweet potato, onion, corn, chili powder, sugar, and salt. Stir to combine.
3. Turn the stove to high heat and bring to a boil. Once boiling, turn heat to low and let simmer for ~45 minutes.
4. Remove from heat and stir in lime juice.
5. Serve and enjoy!
