Beef Barbacoa
This beef barbacoa (or Mexican pulled beef) is super versatile. Use it in salads, burrito bowls,
and tacos. It contains guajillo chiles, rich in capsaicin, an anti-inflammatory that may aid in
exercise recovery and reduce aches and pains.
Ingredients
- 2 lbs stew beef
- 1 white onion, rough chopped
- 3 chili guajillo, stem and seeds removed
- 1 chili pasilla, stem and seeds removed
- 1 tbsp minced garlic
- 1 tbsp salt
- 1 tsp ground black pepper
- 2 bay leaves
Optional to serve: lettuce, bell peppers, onion, jalapeno, salsa, pico de gallo, avocado, beans,
corn, guacamole, cheese, sour cream, cilantro, hot sauce, lime, rice, tortillas.

In a pan over medium heat add the onion, chilis, garlic, pepper, and 1 cup of water. Stir
to combine, cover and let cook stirring occasionally for about 10 minutes or until the
onions are soft.
Transfer everything to a blender or food processor and pulse into a puree consistency.
Add the stew meat and 1 tbsp of salt to an instant pot or slow cooker, pour in the chili
puree, stir, then add the bay leaves.
Pressure cook for 35 minutes with 10 minute natural release, or slow cook on high for 4
hours.
Once cooked the beef will easily shred with a fork. Serve in burrito bowls or tacos, or try
a salad bowl for a lower carb option.
